Memorial Day weekend is when my famous potato salad makes its first appearance of the year. It is my most requested recipe and today it is my gift to you. This potato salad is what my friends ask me to bring to every potluck. It will hands down be one of the yummiest things that you will ever make and, trust me, you will want to eat it all.
The following recipe will yield a large bowl. You will want to make the full recipe for gatherings but note that you can also easily divide it in half if you are serving just a few people.
Dill Potato Salad
5 lbs of red potatoes
2 bunches of green onion
2 c mayonnaise
2 tbsp yellow mustard
3 tsp dried dill
2 tsp salt
1 tsp black pepper
Wash and cut potatoes into bite size pieces. Boil until tender. I do this step the night before. Allow to cool, cover and refrigerate overnight.
In a large mixing bowl, combine the mayonnaise, yellow mustard, dried dill, salt, and pepper. Stir.
Wash and slice the green onions. Add to the mayonnaise mixture and stir.
Add potatoes and gently stir until potatoes are evenly covered.
Refrigerate until ready to eat.
